Yellow. Such an optimistic color. Maybe that's why they chose it for the LiveSTRONG campaign. To help give hope to those who are struggling with cancer.
I am a lucky girl. I, myself, haven't experienced cancer. But I know people who have and people who are going through it now. The cancer has touched them and they have touched me and so I have a sense of awe and respect for them. When my daughter, Lily, came home from the hospital she was placed on hospice, under the care of a wonderful nurse - Cheryl. Come to find out that Cheryl is a cancer survivor. I'm not sure how we would have survived all the ups and downs of hospice life if she hadn't beat the cancer. So, this post is dedicated to Cheryl. Thank you for everything.
Here are my yellow foods for this year's LiveSTRONG with a Taste of Yellow:
Corn Salad with Tomatoes & Basil
4 ears of corn, cooked and kernels removed
1 medium tomato, chopped
2 tablespoons basil, chopped
1 tablespoon olive oil
1 teaspoon white wine vinegar
salt & pepper
Mix first 3 ingredients in a large bowl. In a small bowl, whisk together oil, vinegar, salt and pepper. Pour over salad and toss to coat. Serve immediately or chill for later.
Ice water with Lemon Cucumber
Isn't it pretty? It was actually very refreshing, too. An easy way to turn a plain glass of water into a summery beverage. I'm not a fan of carbonation, but if you are, I have a feeling this would be even better with sparkling water.

So there is a use for a lemon cucumber! Very good. I love the encouragement to live stronger and I noticed how much that coincided with today being Sept. 11. Thanks for everything on this blog. I absolutely love it!!!!
