On the plane back from Maine, I found myself wondering what the next upcoming holiday was. After a quick moment, I remembered: Independence Day! I then, of course, started thinking how we might celebrate it. On a hill watching the fireworks? Well, we don't really have too many hills in Utah...but we have plenty of mountains. Which have plenty of campgrounds. And what better way to spend the 4th of July than with family and a fire pit?

Gather a few families and head to a favorite campsite...or a new one if you're like me and don't camp very often. Roast hot dogs for dinner and let the kids have a watermelon-eating contest. They also might have fun creating their own little parade or talent show for the occasion. Bring party crackers, filled with little goodies, in lieu of fireworks. Serve sticky s'mores for dessert. Then, send the kids to sleep in their tents; the grown-ups can chat the night away around the campfire. This plan would also work wonderfully well on a beach if you have one nearby.
