My family loves eggnog - even our little guy! I remember growing up with a cup of the creamy concoction and a sprinkle of nutmeg in my hand every Christmas Eve. My fondness of it must be the reason why when the holiday season rolls around I always end up buying much more than we can drink. Usually, it takes a sad trip down the drain but this year I determined to be more frugal and put that nog to work in a batch of eggnog pancakes (which were delicious and tasted a bit like french toast).
